Today’s recipe is from Colorful Palate<\/a>. \u00a0They are constantly booked up during the Asheville wedding season because their food is just that scrumptious. \u00a0To show how talented they are, they have provided us with a gluten free and vegan recipe that is to die for. \u00a0Enjoy!<\/p>\n

Moroccan Chick Pea Salad<\/span><\/p>\n

yields – 3.5 QTS<\/p>\n

1\/4 cup extra virgin olive oil<\/p>\n

2 red or sweet onions – chopped onions<\/p>\n

1\/4 cup chopped garlic<\/p>\n

2+ TBS ras el hanout (recipe follows)<\/p>\n

1 tsp red pepper flakes<\/p>\n

1 tsp salt<\/p>\n

~12.5 cups canned chick peas, rinsed and soaked in cold water, drained<\/p>\n

~7 cups can diced tomatoes<\/p>\n

1\/2 cup chopped dried apricots<\/p>\n

1\/4 cup raisins<\/p>\n

1 lemon<\/p>\n

fresh cilantro and\/or parsely<\/p>\n

SAUTEE onions in oil, add spices, cook until soft, add garlic<\/p>\n

add chick peas, tomatoes and fruit to onion and spice mix<\/p>\n

cook on low heat, stirring often for at least 2 hours, can simmer for up to 8hour , stirring every once in a while, or in a covered crock pot<\/p>\n

add salt to taste or more spices while simmering<\/p>\n

add a few drops of fresh lemon juice to taste just before service<\/p>\n

top with fresh chopped cilantro\/parsley<\/p>\n

Served with roasted carrots and butter grilled baguette<\/p>\n

Ras el Hanout<\/p>\n

2 TBS cumin<\/p>\n

2 TBS gr ginger<\/p>\n

1 TBS salt<\/p>\n

1 TBS plus 1 tsp black pepper<\/p>\n

1 TBS cinnamon<\/p>\n

1 TBS gr coriander<\/p>\n

1 TBS cayenne<\/p>\n

1 TBS all spice<\/p>\n

1 TBS turmeric<\/p>\n

1.5 tsp Gr Cloves<\/p>\n
