Today’s recipe is from Colorful Palate. They are constantly booked up during the Asheville wedding season because their food is just that scrumptious. To show how talented they are, they have provided us with a gluten free and vegan recipe that is to die for. Enjoy!
Moroccan Chick Pea Salad
yields – 3.5 QTS
1/4 cup extra virgin olive oil
2 red or sweet onions – chopped onions
1/4 cup chopped garlic
2+ TBS ras el hanout (recipe follows)
1 tsp red pepper flakes
1 tsp salt
~12.5 cups canned chick peas, rinsed and soaked in cold water, drained
~7 cups can diced tomatoes
1/2 cup chopped dried apricots
1/4 cup raisins
1 lemon
fresh cilantro and/or parsely
SAUTEE onions in oil, add spices, cook until soft, add garlic
add chick peas, tomatoes and fruit to onion and spice mix
cook on low heat, stirring often for at least 2 hours, can simmer for up to 8hour , stirring every once in a while, or in a covered crock pot
add salt to taste or more spices while simmering
add a few drops of fresh lemon juice to taste just before service
top with fresh chopped cilantro/parsley
Served with roasted carrots and butter grilled baguette
Ras el Hanout
2 TBS cumin
2 TBS gr ginger
1 TBS salt
1 TBS plus 1 tsp black pepper
1 TBS cinnamon
1 TBS gr coriander
1 TBS cayenne
1 TBS all spice
1 TBS turmeric
1.5 tsp Gr Cloves
